Crispy Potato Croquettes Recipe

These delicious Potato Croquettes are crispy on the outside and soft inside.

  • 4 cups hot mashed potatoes
  • 2 egg yolks
  • 2 tablespoons flour
  • 1/2 teaspoon nutmeg
  • Salt and pepper to taste
  • 2 eggs
  • Breadcrumbs
  • Cooking oil for frying


Mix the mashed potatoes with the egg yolks, flour, salt and pepper.

Form balls with the mixture.

Beat the egg well, dip the balls in the egg and then on the breadcrumbs.

Fry the croquettes in shallow oil until golden brown.

  1. That was one good thing my Dutch forebears spread around the colonies, I love Bitterballen. PS They could be addictive when filled with a strong cheese! An amazing share.
