Christmas is just around the corner, but my Christmas baking started a long time ago. Here are two delicious Christmas cookie recipes from my blog. They are very different from each other because one is baked and the other one is no-bake, but they are both easy to make. What’s more, both of them are shaped like Christmas trees, and they both are made using matcha powder.
Matcha is a finely ground green tea powder. It is rich in antioxidants, vitamins and minerals. Some of the benefits of consuming matcha include detoxication, energy and immune system boost, and prevention of different diseases. Of course, using matcha powder is optional, because not everyone has it at home, but it is what gives the cookies their wonderful green color.
No-Bake Cookies
The ingredients for this delicious no-bake cookies are suitable for a plant-based or vegan diet. I used orange jam as a sweetener, but you can use anything you want. I also decided to use hazelnut butter, desiccated coconut and oat flour. You can see some substitute ideas on my blog.
I used matcha to make my glaze, but you can use dark chocolate or homemade dairy-free white chocolate instead. See the cookie recipe here.
Crispy Cookies
These cookies are crispy, delicious, vegan and gluten-free. They are made with coconut flour and rice flour.I should let you know that this dough may not be perfect to cut shapes like Christmas trees or stars out of. However, it works fine after you refrigerate it for a while. Get the recipe here.
