Today is all about the Upside Down Cake.
My Mom used to make a delicious pineapple upside down cake. I have the recipe and make it from time to time.
It is delicious and brings back good memories. She used an iron skillet to make this treat.
An upside-down cake is a cake that is baked in a single pan with its toppings at the bottom of the pan. Then, when removed from the oven, the upside-down preparation is turned onto a serving plate.
The photo looks exactly like my Mom’s. She put the sliced pineapples on the top and added cherries.

No Andre, this is not a photo of mine, can’t take credit. But I have made many in the past and they are delicious.
I have always seen the great photos of this cake and heard about it but I have never eaten it.
It is really good and moist and you can use other fruit, like apple. I prefer pineapple.
I haven’t seen this cake yet. We work similarly with apricots.
I love this one, I guess you could use other fruits.
