Every day I am seeing the produce sections flooded with corn, some 3 ear for $1.00 some even cheaper! With Summer beginning June 21st its time to enjoy the early sweet goodness of corn.
Corn is one of my favorite vegetables and for years I adored eating this homemade cream corn over at my elderly friends house, so one day I watched how she made it so I could make my own, its simple! This is the best homemade cream corn I have ever ate! Its sweet naturally and just a little crunch with each creamy bite.
Lets get started!
A list of ingredients:
- 2 ears of fresh corn
- 3 tablespoons of butter
- 2 tablespoons of flour
- 1/2 cup of milk
- Salt to taste
- Black pepper to taste.
I remove the husks and the silk and wash the corn in cold water.
Using a dinner plate I cut the corn off the cob, this will be messy! Hold the corn at the top, the slender end, and I place the knife going down and I cut slowly as close as I can to the cob.
Then I turn the knife over and I use the back to run down the cob and get ” the juice” off, this will be the messiest part.
In a medium size skillet I put 3 tablespoons of butter. Turn the heat to medium and allow it to melt. Add the corn and cook for around 3 minutes, stirring occasionally.
Add 2 tablespoons of flour and mix well into the corn, stirring and scraping the bottom for around one minute.
Add 1/2 cup of milk.
Stir until hot and thickening. Remove from heat, sprinkle with salt and black pepper.
And viola! You have homemade creamed corn.
Make 4 1/2 cup servings or just eat it all and call it a meal 🙂 Support your local farmers by shopping the farmers market in your area. My home town had a weekly set up but the bigger towns have a daily set up for the farmers to sell their produce to the public. You not only help support the families but you know where your food is grown.
