I love this creamy dish with a crusty layer of bread crumbs and cheese.

1 large cauliflower
2 cups milk
1 cup dried breadcrumbs
6 oz. cheese
1-1/2 oz. butter or margarine
2 tablespoons flour
Pinch of nutmeg
Salt and pepper to taste
Cut the cauliflower into pieces and steam it until half cooked.
Place the cauliflower pieces in an ovenproof buttered dish.
Melt 1 tablespoon butter add the flour, mix and cook until lightly golden.Remove from the heat, add the milk and mix until smooth. Add the nutmeg, salt and pepper and mix well. Cook over low heat stirring constantly for about 5 minutes.
Stir in the cheese and pour the sauce over the cauliflower.
Shake the breadcrumbs over the top, cut the remaining butter in bits and place them over the breadcrumbs. Bake for 20 to 30 minutes, or until the cauliflower is soft.
