How are you celebrating this day?
Here’s a pumpkin cheesecake idea from me. I tried to make this treat a little bit healthier and I used coconut cream and curd for the filling. Curd is a great source of protein. The base is similar to this one.

We don’t celebrate Thanksgiving in our country but I never mind to taste or enjoy delicious food.
Same here. We don’t need an excuse to enjoy a yummy treat.
I love cheesecake. I cooked so much food no room for dessert. But I will make up for it tomorrow probably.

I like pumpkins and I like cheesecake, but I have never tried a pumpkin cheesecake before. It sounds nice though.
Maybe if you like both, you’ll like the combination too. I didn’t add too much pumpkin, because I didn’t want the filling to be too watery, but it stil turned out nice. 🙂
I am not sure what the day will hold, but I had pumpkin pie for breakfast!
