The last vegetable to be harvested in my garden is the carrot. While I have a small vegetable patch in the garden, I always reap more carrots that I am able to process and consume. However, this just means that friends and family can share in the carrot harvest.
The photo shows a portion of some of the carrots reaped this year. Most are blanched and prepared for freezing and lasts over the winter. Though carrots are usually orange in color they can come in other colors like white, yellow and purple. Carrots, apart from being highly nutritious, can be used in a variety of dishes. They can be sliced, diced, roasted, stir-fried, juiced, used for carrot cakes or eaten fresh.

I love carrots! yours look quite lovely. You would have to eat many carrots at one time to end up modifying the natural hue of your skin.

I guess it has a lot to do with the weather at the time. This year my cucumbers hardly grew at all.

Err …no! Of course, by definition too much of anything is bad for you, otherwise it would not be “too much”!
They used to say that eating carrots could help you see in the dark, but I gather that that was put about during WW2 as a way of encouraging people to eat more carrots because there were plenty around and not a lot of anything else!
Yes I heard about that and another explanation for that was that it was a made up story to mislead the enemy.
Surely, eating too many carrots can turn your skin yellow because of the beta-carotene contained in the carrot.
