Continuing with my ABC Dessert series. On the letter “H” today.
I chose Hummingbird Cake.
I love the name of the cake and it is a favorite. Sort of like a carrot cake. The cream cheese frosting is the best.
Hummingbird Cake is a southern classic. It’s a super moist cake made with mashed bananas, pineapple, and chopped pecans. There are variations out there with some different add-ins.
The origin of the name seems to be a mystery, at least from the bit of research I’ve done on it. I did read this interesting bit of trivia, not sure how correct it might be:
Created on the island of Jamaica, hummingbird cake was named after the island’s national bird, where it is also known as the Doctor Bird cake. Doctor Bird is another name for the island’s national bird.

i have never heard of Hummingbird cake. You had my attention at cream cheese frosting!
I could eat just the frosting. This is very similar to a carrot cake.

The bigger stores like Publix usually has these.
wegman’s bakery said they can make them – so I am ordering one!

That cake looks and sounds delicious. I would not try to make it myself but if anyone gave me a piece I would certainly enjoy it.
They are so good, I could eat a piece now if I had one. Love the frosting best of all.
