Cauliflower is healthy, period. A cupful has 77% of the required vitamin C and is high in folate, vitamin B6, potassium, and manganese. Cauliflower is packed with Omega-3 fatty acids. By the way, cauliflower is also negative calorie.
i currently have some cauliflower too. i like to make raw vegan rice by crumbling pieces down, or it them raw with dip.

I love it steamed, though I usually serve it with mayo or cheese sauce. I like ranch dressing, too, but none of those toppings is low cal.

I made it into a pizza crust once, and it wasn’t horrible but wouldn’t eat it again. Tried it mashed (homemade and frozen) and couldn’t stand it). There are lots of ways to use it especially in the low carb world.

In some of those recipes, like mashed, the cauliflower is often over-cooked, though. That releases the sulfates that are characteristic of the cabbage family, and a lot of people don’t like the taste of sulfate.

You’re very welcome. This isn’t close to all of the negative calorie foods, either, and I plan on writing a second list in order to include more.
Great list of healthy vegetables…Only thing I do eat (well I have) is spinach.

It might be worthwhile, for your health, to figure out ways to include the others in your diet more often. There are several vegetables that I don’t care for if they are prepared in one way, but I love them if they are prepared in another way. The challenge, and it can be fun, is to find the ways to prepare the veggies so you’ll like them. That is a matter of personal taste, no pun intended.
I like almost all of these except beets!

My wife and daughter love beets, but they prefer them pickled. I use beet juice when I make pickled eggs, mostly because of the beautiful shade of pink they turn the eggs. However, I don’t think that qualifies as eating beets. LOL
