Happy new week, friends! Here’s another delicious treat for Easter.
This is a variation of my carrot cake cookie recipe. This time I used only desiccated coconut and no oats to make them, and I added some tahini and grated apple. This makes the recipe perfect for someone who eats gluten-free or paleo. The cookies turned out super soft, moist and delicious. You can find the original recipe on my blog.
