Since its summer and we are all out having fun or working on those summertime projects, its time for quick but filling meals, plus a meal that will not heat up the house. Less than 30 minutes is idea for me.
I want a meal that is fast but still healthy, sometimes I will substitute pasta for zucchini noodles make with the spiral cutter.
This is how I make dinner in 30 minutes.
What you will need :
- Angel hair pasta
- 1 onion
- 8 ounce package of mushrooms
- 1 green bell pepper
- Pasta sauce of your choice
- Ketchup
- Olive oil
- A pinch of Italian seasoning
Let`s get started!
First I put the water on to boil for the angel hair pasta, with a pinch salt added.
Next I washed and sliced the mushrooms and chopped the onion.
I heat a couple spoons of olive oil in a skillet, I added the onions and mushrooms, cooking them till the onions are turning clear, add the green bell pepper and cooked this a couple more minutes till the bell pepper are semi soft.
I added 3/4 jar of the pasta sauce and 1/2 cup of ketchup to the onion mixture, add the Italian seasoning. Cover and let simmer on low.
I used New York brand garlic bread. I heated the oven to 350° and let that cook.
I drained the angel hair pasta and added it to the sauce, mixing it and allowing it to ” rest” while the bread is heating.And that was my delicious dinner after and hard days work.
NOTE: You can use your frozen bell peppers as I did, it cuts the cooking time in half but if you use fresh cook those a minute before the onions and mushrooms.
You can also use your choice of pasta or use noodles, instead of angel hair pasta. Regular or whole grain. Maybe even skip pasta and use zucchini noodle?
Love Basil? Chop fresh Basil and sprinkle over the spaghetti after plating.
