La Jenna's Cooking Challenge – Chocolate Weetbix

I don’t know if overseas countries have “Weetbix” for breakfast but “Kiwi kids love Weetbix”.

It’s healthy and good for you and recommended and made by New Zealand Sanitarium. This company stems from 7th Day Adventists.

Anyway, I am not one of those but often buy their products. Mum used to make it for our school lunchbox.

My husband likes Weetbix and I have it occasionally. 

I decided to use up the leftover crumbs.

Chocolate Weetbix

Melt 4 ounces of butter or margerine

Put in together,

2 crumbed Weetbix, 1 cup of flour, 1 teaspoon of baking powder, 2 tablespoons cocoa,

2 handfuls of coconut, 1/2 cup of brown sugar.

Mix well together and press into a square cake tin. 

Bake for 20 mins and ice with chocolate icing.

To make the icing I boil the kettle and cook a couple of spoons full of cocoa and a little knob of butter.

Add icing sugar and ice when it is hot out of the oven. Cut into squares straight away.

Be careful eating it, it is delicious and more -ish.
