Apologies to everyone I have not caught up with lately, but I will get around to each of you eventually! It has been so long since I posted anything here I have about forgotten how, so here is a picture from my dinner. I love corned beef! I made this last night in the 3 quart Instant Pot on pressure for 90 minutes, then placed in a stainless steel meat press which makes it easy to slice cold and then reheat. Portion control and all that, too.
It is tender and delicious. I got the dish at a yard sale this morning for $1 and consider it a lucky find as a deep dish pie plate like this could easily cost forty or fifty times that much. It is almost 3″ deep and 12″ in diameter.

Yes, I like corned beef. It is easy to prepare and to cook.
Finally, here is something we have in common.
Wow! that is great. Since I was a kid, corned beef was my favorite. Now I am already a senior citizen.
That too we have in common, although I do not feel “old” and hope you do not feel “old” either.
Unfortunately in our country we do not have a sale in the backyard
Oddly, we do not have yard sales near my summer home, vidocka, but down here 40 or 50 homeowners set up tables in their driveways every spring and every fall. They even have a charity that collects money by driving around in a golf cart selling cold drinks and hot dogs.
I love yard sales but I have not been to one in years. However, I do go to thrift stores a lot in see bargains there.
I like them both! The main difference is there is haggling at the yard sales and most things are a lot cheaper. Also it is easier to find things at thift stores.
Easier bargain too at yard sales. And besides, at yard sales you may not run into the issue of getting something dirty or torn compared to second hand thrift stores. I have purchased things from thrift stores that were borderline unusable
I love corned beef since I was a kid. After I got married, I am the only corned beef eater at home.
The recipe that I like most is frying it with butter, chili, garlic, and onion.

I am sure you would like it. I like it all year round, but here it is most popular on St. Patrick’s Day, served with cabbage.

It is solid when sliced and served like a luncheon meat, but softens up when heated. Either way I make mine very tender.

I’ve never liked corned beef but I do go to what we call “Garage Sales” I think the same as your “Yard Sales”
I guess its the way its cooked.
Hi Pamela, this dish I actually got at a Lot Sale in a manufactured home park, but I thought most people would not know what that is. They just have carports instead of garages and it is like a garage sale except that there are hundreds of them all on the same day, and they print up a map that shows which homeowners are participating. They are really fun.
It looks delicious indeed! I wish we had such sales here too.
Thank you ellie925, where I stay in the summer we don’t have this kind of sale, but in the spring and fall I live in an area that has lots and lots of them. I really enjoy going to them and almost always buy things.

I am a fool for corned beef and cabbage! Whenever my mum asks what I want for dinner, that’s the first answer I give…
I love it too, Alex and make it often. I like it fork tender so I cook mine for 90 minutes in the Instant Pot. Easy Peasy! I normally cook the cabbage separately, in chicken broth.

Yes I love it with cabbage. I always bake it in the oven.
