La Jenna's Cooking Challenge – my made up meal

This is in conjunction with La Jenna’s cooking challenge. A very simple dinner eaten with chopsticks or your own utensils.

One quarter is egg foo young, very simple to make. beat eggs or egg substitute if you are a vegan. Put a little sesame oil in a frying pan , spread it. Then add beaten egg and tip the frying pan up and down so it covers it evenly. Only takes less than a minute so as soon as it forms, take it out, and put aside.

I use instant noodles that boil in a minute.

Boiled Kumara or just boiled sweet potato. Kumara is a New Zealand Sweet potato. Kumara is full of anti oxidants and is very good for you.

Then just ordinary stir fry vegetables. I arrange in colours bright greens, vibrant red vegetables, or finely chopped carrot to achieve contrast in colour, always use chopped onion, garlic and chopped ginger. Herbs like thyme, but thyme is best served fresh from the garden. Add Soy sauce or else Tamari sauce. I like both.

I use a little as a little goes a very long way.

Enjoy. I don’t use sugar in stir fry cooking, because the onion caramelises itself and no sweetener is required. Garden greens are my vegetables. Especially finely chopped silverbeet & spinach which is high in Iron and vitamin C.

Taste while cooking. Watched frying pans never burn,
