We really like this dish served cold in the summer. Part of the reason we like it are the great benefits from the ingredients. Tomatoes keep your bones strong. Zucchini helps your eyes and sharpens your vision. Eggplant has nusuin and it is very good for your body. Peppers have high levels of collagen so they are helpful for your skin. Onions are a great source for Quercetin. Quercetin has been shown to thin the blood, lower cholesterol, raise good-type HDL cholesterol, ward off blood clots, fight asthma, chronic bronchitis, hay fever, diabetes, atherosclerosis and infections and is specifically linked to inhibiting human stomach cancer.
The basic recipe is chop up want the vegies and give them a quick stir fry toss in avocado oil. Al dente is the way we like them. Season with a little salt and basil. Put it in the fridge overnight and eat it chilled the next day.
