Eggs, Eggs And More Eggs

Regardless of the price hike of eggs, that can be seen all over the United States, people are still buying them. Why? We have grown to love eggs. Lately I have spotted egg prices down to $1.40 per 21/2 dozens so all hope is not lost.

Now, I can think of many ways to cook eggs and at what meal to serve those eggs, I will share several ways to make eggs, breakfast is the most common time to have eggs but why not add them as lunch or dinner, or how about a snack?

Most people do know how to cook eggs for breakfast, but I have seen one mistake happen over and over. Cheese and scrambled eggs. Most people dump everything in a bowl, mix and toss in the skillet. To me this has lost the cheese and made a harder texture of eggs.

Try eggs like this for Breakfast.

You will need:

  • 2 – eggs
  • 1- slice of American cheese
  • Pam spray

In a bowl slightly beat two eggs.

Heat a cast iron skillet and spray with Pam cooking spray [I use original].

Add eggs to hot skillet and cook till done but not brown.

Remove the skillet from the heat and add American cheese slices. braking into pieces and folding in. Serve hot!

When doing scrambles eggs with cheese you do not want to cook the cheese, just melt it, or you will lose all the cheesy clumps.

Lunch :

I have to say that this is not a pretty dish at all but it does taste good. I learned to cook this when I lived in the mountains of Tennessee at the age of seventeen, I was already playing house.

Scrambled with Salsa

You will need:

  • One small onion, chopped
  • A dash of garlic powder
  • 1/2 stick of Butter
  • One small Potato, cubed but sliced super thin
  • 2 eggs
  • Salt and black pepper to taste
  • Smooth salsa
  • One slice of cheese – Optional

In a cast iron skillet melt butter on medium high heat till bubbly. Add potato and cook for around a minute. Add the onion and cook till it done but not brown.

Move the potato and onion to one side of skillet, On the empty side add two whole eggs. Scramble till done and combine with the potato and onion. Sprinkle with garlic powder, salt and pepper.

Remove from heat and add 1/4 cup of salsa. combine . Top with American cheese broken into pieces and fold into egg mixture, allowing to melt.

There that is eggs with salsa. Look bad but tastes Oh So Good!

Dinner :

I can say that deviled eggs are always welcome on my dinner table and for the most part can be the protein part of my dinner if not everyone else`s. I usually boil 6 eggs and it`ll make 12 deviled eggs but you can adjust the amount needed for any size family.

Deviled eggs

You will need :

  • 6 eggs
  • 1/4 cup minced onion
  • 2 tablespoons sweet relish
  • 1 squirt of yellow mustard
  • Mayonnaise
  • Paprika – optional

Boil eggs  and Remove peel

Slice each egg long wise and dip out the cooked yolk and put into a mixing bowl.

To the egg yolks add one tablespoon of minced onion and two tablespoons of sweet relish, drained.

Add dab of yellow mustard and a heaping spoon of mayonnaise. Sprinkle with a dash of salt.

Mix thoroughly.

Spoon yolk mixture into the halved egg whites.

Sprinkle lightly with paprika.

  1. Egg prices here are $1.99 for a dozen medium and about a dollar more for large. Our chickens keep us in eggs, but if we make deviled eggs, we still buy them. The brown eggs just aren’t great for making hard boiled. The taste is there and so forth, but the brown eggs just don’t peel well, even using the tricks I learned at the restaurant.
