Filiform and elegant, chicory is a “true celebrity” due to its therapeutic qualities. It is high up to one meter, with blue flowers. Underground it develops a strong root in which are deposited the plant’s reserves. From the chicory root, if it is fried and then crushed, a dark powder is obtained. This powder is often used as a coffee substitute. It has digestive and nerve tonic effects.
