Okra is a good source of potassium, vitamin B, vitamin C, folic acid, and calcium. Its pods are eaten raw, steamed, cooked, or fried, or included in stews and soups.

  1. Since it isn’t grown here, we usually have okra only a couple times a year. We don’t care for the sliminess, so have to go through the extra steps of salting it, rinsing it, etc, so they aren’t slimy.
