Okra is a good source of potassium, vitamin B, vitamin C, folic acid, and calcium. Its pods are eaten raw, steamed, cooked, or fried, or included in stews and soups.
Since it isn’t grown here, we usually have okra only a couple times a year. We don’t care for the sliminess, so have to go through the extra steps of salting it, rinsing it, etc, so they aren’t slimy.

We never mind its slimy oily tendency once it’s cooked. We never do anything. We even dip it to a salt or to a vinegar when eating them.

In the southeast US, where they grow a lot of okra, they make use of the sliminess by cooking it into gumbo stew. I’m just not crazy about it. lol Once treated, though, I do like them batter-fried.
