I enjoy squash. This is a summer squash soup that celebrates summers’ bounty. It is a bright a beautiful soup. It is easy to make and you can add any other ingredients you love.
In a large frying pan with a touch of avocado oil add one chopped red onion, and saute until soft. Add 2 cups fresh yellow corn, 2 yellow peppers chopped, and three chopped yellow summer squash. Saute and complete in the mixture.
In a soup pot add 4 cups of chicken stock, tsp turmeric, TBS chili paste, and tsp salt. Give it a good stir and add sauteed vegetables. Cover and simmer 30 minutes. Put in blender. Blend until smooth and enjoy.

Yes, I made up a vegetarian stir fry with rice for tea tonight. Fried onion, garlic and moroccan seasoning, added pumpkin, chopped carrot, chopped mushrooms, chopped celery, garden greens.
Good soup works on a cold day.
