Had a tough time to churn out this cake as our cake mixer did not work. It had to be mixed manually which was not easy but with determination and enthusiasm I suppose one can surmount any difficulty.
The results however were successful. It had the same texture and softness as the cakes that I normally bake. Date and Walnut is my signature cake and so I do not even refer to notes. I know exactly how much to put of what
What I like the most about baking is the aroma it spreads and with carols in the background we do get that Christmas feel

Looks delicious, there’s nothing better than the aroma of freshly baked cake. I have a hand mixer, but I rarely use it, because there’s more mess to clean.
Ours used to work on electricity It is an old one but never let me down This is the first time.
