When it comes to chili/chili pepper or cayenne peppers you can count me in. I am forever in love with tamale pie and the microwave chili pie. Autumn is in the air, so is football parties and get together, these are perfect and reasonable enough priced not to break the bank but satisfy a hungry man, or woman.
Most of these dishes call for beef but I do not eat beef so I make it with ground chicken or ground turkey.
To make Tamale pie you will need:
1 cup of cornmeal
4 cups of water
1 teaspoon of salt
1 medium onion
1 green pepper or chili pepper
3 tablespoons of olive oil
2 1/2 cups of cooked tomatoes
2 cups of cooked ground chicken or turkey
1 teaspoon of salt
dash of cayenne or chili powder
Preheat oven to 375°
Cook cornmeal, 1 teaspoon of salt and water in a double boiler for 45 minutes.
Chop onion and pepper, fry in the olive oil. Add Tomatoes and salt, Add cooked ground chicken or turkey and chili or cayenne powder. Cook until thick.
Grease a baking dish and put a layer of cornmeal mush on bottom, one half of the mush. Pour the meat mixture on top and then top with the rest of the cornmeal mush.
Bake for thirty minutes or until the top is lightly browned.
Makes 6-8 servings.
Now I am going to give you the easy as pie for those in a hurry times. Here`s how to put together a chili pie.
To make a chili pie you will need :
A bag of corn chips, the brand of your choice.
Two cans of Hormel turkey chili, or regular beef chili
Kraft American cheese slices
In a large baking dish pour the corn chips in and make sure they are even. [ make sure it will fit in the microwave]
Add the chili on top of the corn chips.
Cover the entire casserole dish with slices of American cheese.
Microwave for two minutes.
Makes four servings.
See I can cook and not cook 🙂
Whether its a tamale pie or a chili pie, cooking or not cooking, I got you covered!
