When it comes to chili/chili pepper or cayenne peppers you can count me in. I am forever in love with tamale pie and the microwave chili pie. Autumn is in the air, so is football parties and get together, these are perfect and reasonable enough priced not to break the bank but satisfy a hungry man, or woman.
Most of these dishes call for beef but I do not eat beef so I make it with ground chicken or ground turkey.
To make Tamale pie you will need:
1 cup of cornmeal
4 cups of water
1 teaspoon of salt
1 medium onion
1 green pepper or chili pepper
3 tablespoons of olive oil
2 1/2 cups of cooked tomatoes
2 cups of cooked ground chicken or turkey
1 teaspoon of salt
dash of cayenne or chili powder
Preheat oven to 375°
Cook cornmeal, 1 teaspoon of salt and water in a double boiler for 45 minutes.
Chop onion and pepper, fry in the olive oil. Add Tomatoes and salt, Add cooked ground chicken or turkey and chili or cayenne powder. Cook until thick.
Grease a baking dish and put a layer of cornmeal mush on bottom, one half of the mush. Pour the meat mixture on top and then top with the rest of the cornmeal mush.
Bake for thirty minutes or until the top is lightly browned.
Makes 6-8 servings.

In a large baking dish pour the corn chips in and make sure they are even. [ make sure it will fit in the microwave]

When I make Tamale Pie I add corn to it and use corn muffin boxed mix on the top (a little shortcut). I also use quite a bit of chili powder. Just thought we’d swap ideas.
Thank you! I have done this one too! The no cook is for those who don`t know how to turn on an oven. 🙂
Sounds really good. I have not cooked with cornmeal but I will try this.
Oh! cornmeal makes so really good stuff.
I like corn everything.
Cannot do the hot peppers but the rest would be good.
Yeah, a lot of people do not tolerate hot peppers. Just leave those out
It sounds like something my husband might really enjoy.
That is awesome! Its easy too and that is what is best for me 🙂
