Lebanese Flatbread includes flour, teaspoon of dry active yeast, and water. Mix well into a smooth texture, and let sit for about an hour. Add a spoon of olive oil, pinch of salt, and flour. Mix with a wooden spoon. Knead for two minutes. Cover and let sit for hour to two hours. Place inside a ziplock bag and place into the refrigerator overnight.
Next day, take a small piece and roll and make into a flat piece. Then, stretch out into a very thin and flat piece. Place on the pan, over medium-high heat, and cook on both sides until it blisters.
Note: There are many different versions on YouTube. It is fun to check out different flatbread version, and then choose which recipe and demo you prefer. This recipe appears to require more work than the other video recipes I posted. But the bread looks really cool and yummy.
