Rice Halwa (pudding)

Rice Halwa (pudding) was my mother’s favourite recipe. Though simple, one needs a lot of patience as it needs to be cooked for hours.  Rice is ground in coconut juice and cooked with sufficient jaggery and pure ghee.  The flavour comes from cardamom powder and it is garnished with raisins. 

One needs patience as it needs to be stirred constantly as it gets stuck at the bottom and it takes hours for it to be ready. It is a delicious snack which just melts in one’s mouth 

Patience is not my middle name and so I have not attempted it.

    INGREDIENTS NECESSARY
    water – 4 hours
    sugar – 2 and 1/2 hours
    semolina – 3 hours
    vanilla – 1 pc.
    oil – 1 h
    cinnamon – optional
    METHOD OF PREPARATION
    We first make water and sugar syrup. Vanilla is added to it.

    When done, oil is poured into a deep frying pan. When warmed pour the semolina and fry until golden.

    Then pour the syrup on it and mix vigorously to prevent lumps.

    We pour into a tray and wait for it to cool. Sprinkle with cinnamon if desired.
