The Lablab purpureus or the hyacinth bean is a delicious legume. It tastes amazing when cooked with tomatoes , herbs and spices Thai style. We grow it when the weather cools down after the rains. It takes about 3-4 months for the blooms to come up and the pods to ripen.
The pods are harvested just before they ripen, the beans are shelled and cooked fresh. This year my hyacinth beans look good, by January I should have a good harvest. Sadly these vines are attacked by butterflies (caterpillars) and aphids. They eat the young pods as they emerge from the flowers. I need to keep a hawk eye on the plants to ensure that they stay healthy and not attacked by insects.
The young pods have a purple color on them, this is perhaps why they are called hyacinth beans. This is certainly one of my favorite vegetables.

I hear about this bean for the first time. I’d be happy to try it.
I wish you can, it is pretty tasty, I prefer it to all the others.
I have never tried this, but it sounds interesting. It’s always great to eat produce from your own garden.
It is wonderful to eat produce from your own garden. The taste is so different because it is so fresh and organically grown.
Thank you tasartcraft, i love the taste of these beans,
I only know of water hyacinth which I am told is considered a weed in the US
Water hyacinth is a weed everywhere. But these beans are delicious substitutes for meat.
I do not consider water hyacinth a weed here. I have it in a water tub
If you have it in a tub its fine I have one too, but it chokes water bodies and in the whole of Asia it is considered a weed.
Never heard of this one before.
I guess it is not so common, but it tastes amazing when cooked fresh. Frozen beans doesn’t have the flavor or the taste.
I have a lot of beans in the garden every year, just not this kind … I have bean pods that peel
I love beans too. I need to get the green beans started again.
Now you have 🙂 I guess not many would have heard of this kind of beans.
Never heard of this before ….
