Healthy Eating: Put Veggies in a Muffin

Muffins are good for breakfast, lunch, dinner or as a snack.  Many people enjoy muffins either with fruit in them like blueberries or strawberries or slathered with fruit spread, jam or jelly.  But muffins with veggies are also tasty.  I love zucchini muffins or carrot muffins.  Zucchini and carrot muffins?  Even better!  What about you?  Do you enjoy eating veggie muffins?  The recipes are healthy and easy to make.  Veggie muffins are a creative way to include vegetables in your diet or in your family’s diet.
