Fall is in the air with winter right round the corner, we all need something to warm us all back up, why not soup. This is not your normal soup but I would like you to give it a try. Its healthy and low carb but so filling.
You will need :
- 2 Carrots, sliced thin
- 2 stalks of celery, sliced with leaves is fine
- 1 1/2 cups of chopped cabbage
- 1 large onions sliced in semi circles
- 1 cup sliced okra
- 1 can of diced tomatoes
- 1 can of vegetable broth ( or Chicken)
- Salt
- Black pepper
Just put everything in a large cooking pot. Bring to a boil, reduce heat to low and cover. Simmer for one hour.
Add salt and black pepper to taste.
It’s that simple!

Our recipes are similar, but I add mushrooms and red and green bell peppers. There is nothing better on a crisp fall day than a big mug of vegetable soup with hot buttered cornbread! Thanks for sharing!

Sounds delicious and I use my crock pot for soups. The okra is great although hard to find fresh here. Growing up we always had it in our garden. I love fried okra.
I love okra any way I can cook it. Boiled fried and in soups.
