These healthy and tasty raw snacks are great for a party piece.
Ingredients
75g/1 cup of crispy malted wheat flakes or other similar cereal product
180 ml/¾ cup of soya milk
2 medium carrots, grated
100 g/1¼ cups of ground almonds
Juice of 1 lemon
75g/½ cup of raisins
Small packet of chopped hazelnuts
Method
- Place the wheat flakes in a bowl with the milk and leave to soak.
- Grate the carrots and add to the softened flakes with the almonds, lemon juice and raisins. Mix in using your fingers.
- Roll pieces of the mixture lightly between your palms to form 16 small balls. Sprinkle to chopped hazelnuts onto a plate and gently cover the balls with them.
- Chill for a while before serving, then serve in small dishes and eat with your fingers.
