Strawberry Leather

Since strawberries were on sale I decided to make fruit leather to take on my next camping trip. My Ninja blender has Auto IQ w/Boost, so it chews the hard little seeds on the strawberries up and makes a smooth and fluffy pink liquid out the berries.  After a while in the dehydrator, however, when the liquid starts to solidify, the strawberries turn back into a deep rich red color. This process also intensifies the flavor.

Putting wax paper around the rollups was a mistake as it seems to be sucking up moisture from the fruit so instead of being useful, the paper is sticky on both sides. Usually I just roll the sheets up and then cut the rolls into bite sized chunks. That is less work and works better.

In addition to being delicious, strawberries are rich in antioxidants, as well as manganese. Many people take magnesium supplements to strengthen their heart muscles and prevent joint pain, but they need to know that magnesium needs other minerals such as manganese and zinc to be efficacious.

Strawberries are also rich in Vitamin B-9, which is known to enhance mood. Not only does it protect against illnesses such as depression, but it is believed to prevent cancer, kidney and liver diseases, and also slow down the aging process. All in all, strawberries are a Fountain of Youth Superfood.
