Smoky beans a delicious recipe from L’Auberge Resort in Lake Charles

A friend recommended I try the menu item at Favorites Southern Kitchen in L’Auberge Casino & Resort. Otherwise, I think I would have skipped the breakfast dish.

Fried chicken breast sounded good. But I wasn’t too sure about the cheddar cheese and bacon waffles that came with it. The waffles were topped with maple syrup and creamy butter.

My friend was right, though. The combination was delicious!

I saw many other diners trying the specialty at the resort in Lake Charles, Louisiana. The restaurant’s décor is comforting, sort of like my grandmother’s kitchen in Kentucky.

I had planned to dine at Favorites once more before I left L’Auberge but the resort has seven fine restaurants and I wanted to sample them all, too.

Here is a yummy comfort food recipe from L’Auberge if you would like to try it. Sounds like the food I grew up eating.

When I make it at home, I think I’ll add a skillet of fried potatoes and a tomato/cucumber/onion salad with vinegar dressing. Now, that is some of my favorite comfort food.

L’Auberge Smoky Beans

  • 8 ounces sliced, smoked bacon, chopped
  • ½ cup chopped onion
  • 2 teaspoons minced garlic
  • 2 cups tomato sauce
  • 1 cup water
  • ¼ cup packed dark brown sugar
  • 2 tablespoons dark molasses
  • 2 tablespoons apple cider vinegar
  • ¾ teaspoon dry mustard
  • 1 (8-ounce) can cannellini beans, rinsed and drained
  • 1 (8-ounce) can red kidney beans, rinsed and drained
  • 1 (8-ounce) can pinto beans, rinsed and drained
  • Salt and pepper to taste

Sauté bacon in sauté pan over medium heat until crisp. Add onion and garlic and sauté until onion is translucent.

Stir in tomato sauce, water, brown sugar, molasses, vinegar and dry mustard. Bring to boil. Reduce heat and simmer five minutes.

Add beans. Cover and simmer 15 minutes or until done to taste. Salt and pepper to taste.
