Today, I decided to make some raw vegan soups from green smoothie recipe book I had bought at Barnes & Noble. The author of this book is the same author who wrote the Raw Food book that I also have. Erica Palmcrantz does interesting raw vegan recipes, although she also uses raw honey, which isn’t technically vegan. I think honey is considered vegetarian. Since they are raw vegan, these soups are cold.
For breakfast, I made the Red Green Soup, which basically consists of spinach, arugula, water, apples, sundried tomatoes, beetroot, and avocado. I placed a different amount of each ingredient into the blender before mixing well until I got a creamy consistency. It also looked very red, from the beetroot, and it tasted very sweet from only one half of an apple. I thought it made a perfect raw vegan creamy cereal.
Then for a late lunch, I made the Green Pea Chilled Soup, which consists of spinach, 2 ½ cups of water, ½ of a pear, 1 cup of frozen green peas, and 1 avocado. I mixed these ingredients in a blender, and got a creamy and green consistency, which looks like a pea soup. But it tasted cold and creamy. I think that next time that I do this green soup, I am considering thawing the green peas in the microwave.
This snapshot is of a recent raw vegan pasta I recently made with veggies, fruit, and seeds. I could place all these ingredients into a blender and create my own raw vegan pasta soup.
Both soups were good and creamy, probably from the avocado.

For dessert, I made a raw vegan chocolate milk, which consists of one banana, some cacao powder, and water mixed well in a blender. This recipe is mine that I often do during the summertime, in which I often add ice or vegan ice cream to make it cooler for hot summer days. I didn’t add any sugar because the banana was sweet enough. It tastes for chocolaty and creamy, like real chocolate milk.
