Its Strawberry season! Plus I am on the “eating raw” kick and for me its to help with keeping the diabetes under control.
Now, I know a lot of you will say “fruit turns into sugar” but its complex sugars and not refined. Plus fruit is my candy.
Out of one of the Raw eating cook books I bought I tried this New fruit salad and if you know me I will add or leave out something I did not think belonged and add something that does, so now I made my own easy fruit salad that is wonderful on a hot Summer day.
Here is what I toss together to make this mine and Oh so good !
You`ll Need :
- 1- Mango diced
- 1/2 – Pound sliced Strawberries
- 1/2 cup of diced Jicama
- 1- sliced Kiwi
- 10 – halved Raspberries
- 1- tablespoon Agave Nectar
Place all of the above in a bowl and refrigerate.
Let`s make the dressing!
- Blueberry dressing
- 1 cup of blueberries (frozen works)
- 2 tablespoons of red wine vinegar
- 1 Tablespoon Agave nectar (more if want sweeter)
In a high speed blender add all ingredients and pulse till smooth.
To serve just dip out your serving and drizzle with blue berry dressing.
Its so yummy you cannot stop eating this east fruit salad!

I have never heard of Jicama, where do you get it, do you grow your own?
I buy mine at walmart, its a root and high in carbs but its crispy and taste good.
I love fruit salad. In the summer months that is about all that I do eat during the day.
Plus its the best dessert!
