Soon it`ll be sweet potato time here in central Alabama. The grocery stores and road side produce stands as well as the farmers market will be flooded with truck loads of freshly harvested sweet potatoes.
It is common to see your neighboring states logo on the boxes, here in Alabama I have noticed the Georgia grown sweet potatoes are deeper red, may be because of the red clay? The Mississippi grown sweet potatoes are a pale yellowish orange and it seems the Alabama grown sweet potato falls in the middle of color, we are in the middle! But that is my observance of the three state grown sweet potatoes.
Now how do you like your sweet potatoes?
There are so many ways to cook and serve sweet potatoes that I am sure one will be your favorite, if not all.
One of the newer trends had been sweet potato French fries. Its simple just cut the sweet potato in shoe strings, steak fries or crinkle cut [you may leave the peeling on or remove the peeling, your choice]. Next deep fry them till slightly brown, remove from hot grease and drain them on paper towels. Dust with salt and red pepper.
Next is one of my all time favorites, Iron skillet sweet- sweet potato fries. Peel sweet potatoes and cut into circles as thin as possible. In a large iron skillet melt a stick of butter [a half cup] and a half cup of cooking oil. Drop one circle in to make sure the oil butter mixture is hot and ready to fry. Cook potatoes till you can stick a fork into them and the center if soft.
Remove from iron skillet and drain on paper towels. Sprinkle with cinnamon sugar and serve hot.
Most of the time two sweet potatoes makes two servings unless they are huge sweet potatoes, then one should do.

They are good many ways.
In Asia, we cut it thinly then deep fry with sugar. We also boil it and it is already a staple food on the table.
Yummy, that sound like a sweet potato chip.
Yup and very local here. it is really good for snacking and filling as well.
Have you tried growing your own? Easy enough.
The soil here is not that great, I am struggling to grow some foods, all potatoes are just one of many. But yes in the past I did grow them.
I like to make them fried with butter.
