Holidays are coming. And rich meals are being prepared for the holidays.At least for those people who can afford it.In our northern regions, there is a very popular cake we call strudel. We make them with poppy seeds or nuts, which are the main ingredient of fillets. To make a good strudel you need to be a really skilled craftsman.Maybe this recipe will help.
BasicIngredients Required:-20 gr. fresh yeast-1 tablespoon of sugar- 1 tablespoon of flour-100 ml of warmed milk………………………………………….. …. for the dough-250 gr. coarse flour-250 gr. fine flour-100 gr fine flour-2 small teaspoons of vanillin sugar-120 grams of sugar-3 egg yolks-1 egg whites100 gr, butter1/2 teaspoon salt1 lemon……………………….for fil-250 gr. ground walnuts-2 + 2 teaspoons vanilla sugar-100 gr. sugar + 100 gr. sugar-1 small teaspoon of rum100 ml of hot milk + 150 gr of hot milk200 gr. ground poppy-1 tablespoon of wheat semolinaProduction ;In a deeper glass pan, mix the yeast, flour sugar, and add the lukewarm milk.Stir well or shake the torture wire and allow the lid to stand for 10 minutes in a lukewarm place.Because yeast needs to be raised.Now strain both flours through a sieve into a deep pan.Add 2 teaspoons vanilla sugar, 120 grams sugar, 3 egg yolks and one egg white.Add the melted butter to it.During this time you should activate the yeast if so, pour it all into the container where you already have all the ingredients added. If not wait a little longer.Mix everything well with a plastic cooker.When well blended, add 1/2 teaspoon salt n take the lemon and grind the rind into the dough.Mix the dough well with your hands for 3-5 minutes.Pour some flour on the table and hand out the dough to the flour.Add more flour and knead as you knead bread.Gradually add about 100 gr. fine flour.Mix the dough in the end, sprinkle it with flour, cover with a cloth and let it stand.While the dough is resting we make a fil. Put the following ingredients in the bowl in this order.First ground nuts then vanilla sugar, then 100 grams of sugar, and a teaspoon of rum.Mix everything well and pour in the hot milk to evaporate the nuts.We add poppy seeds, vanilla sugar, sugar and 150ml of hot milk.Sprinkle with 1 tablespoon of semolina and mix well.Now we’re making a strudel.We take the dough, put it where we have the flour and divide the dough into two parts.Roll the dough with a rolling pin to be about 3-4 mm thick.Square frame 55×35 cm.Coat the dough with melted butter using a pastry brush and cookies.We put the nut stuffing on the dough and spread it evenly across the dough.Leave 2-3 cm blank without fillet on three sides and on the fourth where it will end up bending a little more blank dough.Roll the dough into a roll. Close the side edges with a dough to prevent the filler from coming out.These are the limbs.We do exactly the same thing with the other part of the dough just by putting poppy seeds in there.We put greasy paper in the baking pan and then roll our dough into the baking tray.Coat the burned dough with melted butter.Drill the dough with a wooden waiting place in several places.Cover with clear cellophane foil and leave for one hour.After an hour, we remove the foil, again butter and place in a cold oven.We turn on the oven at 170 degrees and bake the strudel for 25 minutes.Remove the baking paper and bake for another 20 minutes.Cool, sprinkle with powdered sugar and chop.For you and me a lot of work but for those who eat a little.They will quickly eat a few pieces.And she’s good after a few days.It is hard work, but it pays to be happy in your home.-
