Sweet pullao is one of my favourite rice preparations. It is prepared from basmati rice which has a nice aroma.
Rice is washed and the water drained out. Raisins, cashew nuts and onions are fried in ghee shortening separately and kept separately. In the remaining shortening rice is fried. Hot water in the ratio of 3:2 (where 3 is water and 2 rice) to which sugar and salt is added is then poured in the fried rice and pressure cooked for 3 minutes after the first whistle. Cinnamon sticks and cloves are added to get a nice flavour while the rice is being pressure cooked.
The friend rice is garnished with raisins, cashew nuts and fried onions before serving. This pullao is best eaten with mint chutney.
