There is science behind the food we eat and how it can help or hurt our overall health situation. Alpha-lenolenic acid and kaempferol have properties that are shown to energize the brain’s concentration center. So perhaps if you need to be at your “best” mental day you may want to eat appropriately.
There is a fabulous Kale salad that my family enjoys. We try and eat it when we know we will be doing some heavy duty studying or have to think more. (There are some of those days.)
It is important to prepare the kale. You cannot toss this one together in a matter of minutes. The first thing you must do is toss a pound of baby potatoes in oil, salt and pepper. Let them roast at 400 degrees for 45 minutes.
Grab four good sized salad bowl plates and get ready to roll.
I typically use a light vinaigrette and top it of with dried cranberries and pine nuts.

Kale is my least favorite veggie, but I love all other green leafy ones, many of which have the same superfood nutrition. I like spinach and kohlrabi, leeks, mustard greens, beet greens, and many more. If I ever eat kale it is powdered in a smoothie, but I like my veggies fresh and raw when I can get them that way.
