Lechon or roasted pig has always been a part of a celebration in the Philippines. At least for those who can afford it.
This is like the turkey on Thanksgiving Day but it is present in almost every type of celebration.
For those who prefer to have a lesser preparation, would have a roasted pig’s head instead.
This pig was roasted for my wife’s nephew’s 7th birthday.

We used to roast the pig in a vacant lot when there is an occasion. But now we just buy the roasted pig.
Sometimes we buy the roasted pug too. But most often, our neighbors or relatives do the roasting. It’s a bit cheaper.
My relatives did this growing up.
I adore such a roasted pig. With us this is a very popular dish.
