I am doing more raw eating and cutting back on cooked foods so I would like to share a meal I made.
I know this may sound extreme but if you think about it people eat a lot of raw foods now. I am just taking it to the next level by making a meal.
I bought a book and this recipe was in the book, although I altered it to my taste. I enjoyed this and to my amazement Tony LOVED it! He said next time to add a slice of avocado on his. This totally took me by surprise.
But this is how you built it:
A big slice of tomato, I got the biggest I could buy!
Next I put grated zucchini on.
Top that with basil cashew butter, homemade.
Finish with another tomato.
Sprinkle with salt and drizzle Basil olive oil, homemade, over the top.
That is a “raw” tomato sandwich without bread.

Does this sound extreme? No way. I found this so so yummy that I am going to try this recipe or a variation of this tomorrow. Never knew one could do so much with Zucchini. Will keep you posted with my experiment. Many thanks for the motivation.
I wouldn’t eat raw all the time. I would try it and add things into my menu. Variety is healthy.
Yes that is what I am doing, eating one raw meal a day does help.

This looks very delicious. Never tried it without bread but would be wiling.
I was not sure either but its good. I will try anything once and sometimes its the best thing I ever ate.
It looks delicious! I don’t think I could live on raw food only, but it’s always great to add some raw products to your meals.
I would love to eat this way but as it is I don`t have time to prepare meals for everyone and me.
