Eat Your Veggies: Zucchini

Growing up what did most of our mothers do to get us to eat our vegetables?  Bribe us.  They would promise we would get dessert if we just eat all of the vegetables on our plate. But in America, for a few decades now, there has been something like a “movement” to get the public to eat less meat and more veggies. Other Virilyans have inspired me, so I have started this series with a twofold purpose.

Purpose 1:  Encouraging people (including me) to develop healthier eating habits; mainly to eat more veggies.

Purpose 2:  Sharing links to posts by my fellow Virilyans that include veggie recipes or health information or both.

I picked one of my favorite veggies as the first post in this series.  Zucchini!

The cool thing about zucchini is that you can use it in a dessert, like a cupcake!  And you can eat for breakfast, lunch or dinner.
