Ingredients:
1 large potatoes (to fit in the fist)
1 liter of water
1 tablespoon of sugar
glass jar of liter
Wash and clean the potatoes and dice them and cook them in a liter of water until cooked.Remove the potatoes and leave the water (do not throw it away). Glaze the hot potatoes with sugar to obtain a uniform and soft mass, like mashed potatoes, without lumps.Transfer this mass to a jar and add the water in which the yeast has been soaked. Do not add all the water, but allow the potatoes or yeast to grow (let the water and potatoes occupy half the volume of the jar).Close the jar with clean gauze and a rubber band. Leave the jar at room temperature for up to four days, that is, until you notice that the boiling has started.You will get enough to mix pastry or bread several times (three to four). This kind of yeast can stand in the fridge for about a week.

I bake with yeast all the times but never made it myself. If it takes only one potato then I can try it next time I’m out of yeast.
