Cauli is definitely healthy….but it’s not one I can stand to eat!
I’ll bet that I could find a way to prepare cauliflower that you’d like. In fact, you might not even know it was cauliflower.
I made it into a pizza crust once, and it wasn’t horrible but wouldn’t eat it again. Tried it mashed (homemade and frozen) and couldn’t stand it). There are lots of ways to use it especially in the low carb world.
In some of those recipes, like mashed, the cauliflower is often over-cooked, though. That releases the sulfates that are characteristic of the cabbage family, and a lot of people don’t like the taste of sulfate.
I didn’t know that, but that makes sense….not sure if I’d like it if it was cooked correctly though either honestly.
steamed cauliflower sounds good….
I love it steamed, though I usually serve it with mayo or cheese sauce. I like ranch dressing, too, but none of those toppings is low cal.

i currently have some cauliflower too. i like to make raw vegan rice by crumbling pieces down, or it them raw with dip.
We are having turkey for dinner tonight and as it happens, we’ll be having steamed cauliflower as a side dish.
