Rice Bhakri goes well with Pork and that is what we will have for lunch today. Brown rice is soaked overnight and ground to a paste. Scraped coconut is added with salt to taste. The dough is rolled on banana leaves and roasted on a thava.
There are other versions of rice bhakri. One can add chopped onions, green chilli, chopped coriander leaves, cummin seed, a touch of sugar and salt. This bhakri can be eaten for breakfast.
The banana leaves leave a nice aroma on the bhakri. They have to be fully roasted before removing them.
