Cooking food right on the spot

The Japanese were the first to show their restaurant’s kitchen to the diners. Most Japanese restaurants here have a glass window to display their kitchen. The glass window is like an assurance to the customers that the food is prepared in the proper way concerning sanitation and hygiene.

In the streets, food vendors cook the food right there on their cart. For the more formal street food area where there are booths, the food is also cooked there for the customers to see. As what one diner said, the showcase of the cooking is the best advertisement. That may be the reason why street food is continuing to grow as an industry. It has a good advertising style.
