There seem to be some salads that just taste better is summer. It’s probably all in my head and now is the time that I begin making them again. Each family member seems to have their favorite.
For the oldest grandson it’s corn and tomato salad.
Drain a can of corn and give it a good rinse. Take a basket of cherry tomatoes and cut them in halves. Mix them together in a bowl.
Now it’s time for the dressing.
¼ cup of olive oil
3 tablespoons of red wine vinegar
Give it a toss and serve.

At the beginning of July in my garden, Tomatoes matured and can be consumed. I was then the main salad.
We usually have Mexican Potato Salad in summer or dry season.
The minute the weather gets hot, I start eating main dish salads again. I love them.
