It’s sap was boiled to produce the sweetener. The sugars are also fermented to make tequila. 

However, by boiling or refining tends to destroy some or all of these health benefits. The Agave Sweetener made today is no exception, and could be more unhealthy than white sugar. 

Because agave syrup is much higher in fructose than plain white sugar, it has a potential for causing adverse health benefits, such as increased belly fat and fatty liver disease.
