This is the 3rd week of enhanced community quarantine. I can not go to the market to buy foods for us. So I need to do some experiment with the ingredients left in our basket. We still have sprouted mung bean, sweet potato, and chicharron.
I sauteed garlic, onion and tomato in a fan, then added the mung beans and diced sweet potato. When the mung beans and sweet potato is almost cooked, I added the chicharron to put some flavor in it. I seasoned it with salt and ground pepper.
It tastes good and Delicious. The sweetness of potato added more flavor to the dish.
