My project of the day turned to making pesto from dandelion leaves. I mish-mashed some of my other recipes to come up with something that would suit my family. I went out and collected a couple cups of dandelion leaves and brought them in to clean and dry off a bit. I don’t believe anyone noticed what I was doing in the yard.

Here’s what I tossed in the blender to make my pesto 2 cups dandelion leases, ½ teaspoon turmeric powder, ½ teaspoon Kosher salt, ½ cup avocado oil, 2 garlic cloves, 1 tablespoon lemon juice, I tablespoon lemon zest, and ½ cup shelled pine nuts. Blend until it is smooth. Remove from blender and add ¼ cup Parmesan. 

There is not much time to use the pesto. It should be used within three days. There are many ways to use pesto.  If anyone is curious and would like to know the ways that I use pesto let me know and I will post that as well.
