How To Cook With Leftovers – Fried Pulled Pork – Two Meals

We have all served leftovers and not got that welcoming smile as you did the day before, even I was feeling the same thing but I was not about to waste food. So, I decided it was time to make those leftovers into an entire NEW meal.

Yesterday I was at work all day, ran errands and before I knew it it was dinner time and I asked” What would you like for dinner, I will bring it home?” Pulled pork was the answer.

Buying pulled pork by the sandwich costs way to much at $4 per sandwich so I bought a pound of pulled pork for $10 and it came with the sauce and will make many meals.

For lunch today I decided to have the pulled pork, after all we do not let cooked food sit in the refrigerator very long. Knowing I had to reduce my intake of bread and Tony not in love with salads I make two different meals with the same fried pulled pork leftovers.

How to fry the leftover pulled pork.

In a large bowl add :

1 cup of self rising flour

1 teaspoon garlic powder

1 teaspoon season salt

1 teaspoon ground black pepper

Stir together.

Dampen pulled pork with just a small amount of water so the flour mixture will stick . Roll into the flour mix.

In a cast iron skillet, or any skillet, heat 1/4 cup of vegetable oil till hot.  Fry the pulled pork till golden brown.

Serving Suggestions.

I am a salad eater, Lunchtime especially so I chopped lettuce and placed it in a circle with the center empty on a plate. I chopped and added one Roma tomato, then I filled the center with the fried pulled pork, drizzled the b-b-q sauce over the top. That is it!

For the sandwich lovers I put mayonnaise on two slices of bread, one side I added around 1/2 cup of the fried pulled pork and on the other side I added chopped lettuce and sprinkled with more black pepper.

And for the rest of the leftover pulled pork? It went into the deep freezer for that quick ” I need something for dinner” day. I can heat the pulled pork, two slices of bread, add sauce and chips for a fast meal.

That is how I create meals from leftovers, and for the same cheap price.
