Ajvar-Balkanian caviar

Autumn is the time when the Balkans prepare food for the winter. Ajvar is one of the most delicious dishes. His preparation is long and laborious, but in the end, all effort is worth it. The best known is the Macedonian ajvar, but neither the Serbs nor the other Balkan countries are left behind in making this exceptional specialty. Here’s an interesting recipe for a home ajvar.

The things you need to prepare for the ajvar are as follows:  25 to 30 kilograms of red pepper,  eggplant according to your wish ..I usually put around 5-6 kg.  2 liters of oil,  100 grams of sugar.  Salt in your taste.

This mixture is fried for 2-3 hours and you must constantly mix in order not to burn.

You can make it in your kitchen with a smaller quantity. Everything is baked in the oven, peeled, ground in a meat machine and fried in a bowl of oil.
