Glutinous rice is not eaten like the regular rice. It is very sticky and has a different texture and taste when cooked. Glutinous rice is best for making into snack food. Our town is noted for native snacks and delicacy made of glutinous rice tops the list. The Bibingka has 2 versions. One is what you see in the picture. The glutinous rice is cooked and topped with caramel made from raw cane sugar. The other version is the powdered glutinous rice that is baked into a kind of rice cake.
Farmers say the glutinous rice is not easy to grow as a crop but if you are successful with a good harvest it means more money than the regular rice. It looks like the glutinous rice will be with us since farmers never forget to plant them in the fields to satisfy the early orders of their customers.
